St. Patrick’s Day always has me thinking of rainbows, so I love colorful snacks to help celebrate the occasion! This is my basic snack mix recipe, where I combine popcorn, cereal, pretzels and a chocolate drizzle to make a sweet and salty snack that my kids absolutely love.

My favorite way to make these mixes extra special is to top them with a cute shape that I make using melted white chocolate chips. At Christmas, I make snowmen, at Valentine’s Day, I make hearts and at Halloween I make ghosts, but I don’t actually have that recipe written up. I couldn’t think of a way to make rainbows for St. Patrick’s Day, but I found these cool sprinkles and thought that clouds would be a cute alternative.

We usually avoid super sweet cereals, but I always get a box of Lucky Charms in March for my kids as a treat. They love to snack on it and they really love it when I use it to make them a special mix like this one.

Make sure to work as quickly as possible when you make the white chocolate clouds. The white chocolate starts to harden immediately, so you have to really just squeeze out a cloud, add sprinkles and move on to the next one. I was able to melt the chocolate chips again after they had hardened in the piping bag and use that to dip the pretzels which was good because I don’t like to waste.

A sweet and salty snack mix with all the colors of the rainbow that’s perfect for St. Patrick’s Day!

Ingredients

  • White chocolate clouds + dipped pretzels:
  • 1/2 c white chocolate chips

  • 1 tbsp rainbow star sprinkles (or plain rainbow sprinkles)

  • 1/3 c waffle pretzels

  • Snack mix:
  • 2 c popped popcorn, lightly buttered + salted

  • 1 c rice Chex

  • 1/4 c Lucky Charms marshmallows

  • 1/2 c Berry Swirl Lucky Charms

  • 1/4 c white chocolate chips (for drizzling)

Directions

  • Start by making the white chocolate clouds and the white chocolate-dipped pretzels. The white chocolate needs to set after making these, so I make these first and then make the snack mix. Start by lining a flat surface with parchment paper. The parchment paper will allow the white chocolate to unstick from it easily after it hardens. To make the clouds, I melted 1/2 c of white chocolate chips in a microwave safe bowl by putting the bowl in the microwave for 20 seconds, then stirring, then another 20 seconds in the microwave, then stir, then another 20 seconds in the microwave and usually on this stir, all of the chocolate chips will melt.
  • Spoon the melted white chocolate into a piping bag if you have one. I found that the piping bag helped me to form the cloud shapes. The chocolate will begin to harden, so you need to work quickly. I made as many clouds as I could before it had hardened and ended up with 6 clouds. As you pipe each cloud, add some rainbow star sprinkles. If you don’t add them right away, the chocolate will harden and the sprinkles won’t stick.
  • Once the clouds are done and the chocolate has hardened in the piping bag, pull the chocolate out of the piping bag, place it back into the microwave-safe bowl, microwave for 30 seconds, and stir. One at a time, dip waffle pretzels into the melted white chocolate and add rainbow star sprinkles as you go.   • Add the popcorn, marshmallows and both kinds of cereal to a large bowl or serving tray and mix it up.
  • Melt 1/4 c of white chocolate chips in a microwave safe bowl 20 seconds at a time, using the same method as above, until completely melted. Use a spoon to drizzle the melted white chocolate over the snack mix.
