The Best and Easiest Roasted Feta and Tomatoes

If you love feta and tomatoes, then I promise that you will love this! It’s one of the easiest things to make that is mostly hands-off. For an easy appetizer idea, serve this alongside my Artisan Bread and some fresh veggies!

For a delicious pasta night, boil a box of your favorite pasta according to package directions and reserve some of the starchy pasta water before draining. Put the drained pasta back into the pot and pour the roasted feta and tomato mixture over it. Slowly add a little bit of pasta water at a time so that it forms a sauce and covers the pasta nicely.

One of my favorite ways to use this is as a little snack. I like to dip sliced cucumbers into the warm feta and tomatoes. It’s so good!

Store leftovers in an airtight container in the fridge for 2-3 days. I like this warm best, so I typically reheat it in the microwave for 20-30 seconds. So easy and delicious!

This roasted feta and tomatoes recipe comes together in minutes and then simply needs to roast in the oven until the feta is soft and the tomatoes are bursting. Add to your favorite pasta, a fresh piece of bread, or use as a dip for veggies.

Ingredients

  • 8 oz block of feta cheese

  • 2 cups small tomatoes

  • 4 cloves garlic, peeled & smashed

  • 2 tsp Italian seasoning (I use this)

  • 1/4 tsp salt (I use this)

  • 1 tbsp extra virgin olive oil

  • 1 pinch freshly ground pepper

Directions

  • Preheat oven to 400 degrees F and set a rack in the top 1/3. Gather ingredients.All ingredients for the roasted feta and tomatoes on a wooden tray. Feta, tomatoes, garlic and seasoning.
  • Add all ingredients to an oven-safe baking dish and stir. You can add more or less of anything here, my measurements are approximate. I used a 7″x11″ baking dish, but you can use a larger one if you want to make more. This is super easy and flexible.   • Roast in the oven for 40-45 mins until the feta is golden brown at the edges and the tomatoes are bursting. I don’t stir this while cooking at all.Roasted feta, tomatoes and herbs in a glass Pyrex baking dish.
  • Stir and mix all ingredients together. I try especially to mix in the garlic. The cloves will be soft, so I try to tear them apart with a spoon as I’m stirring so that I can distribute them more evenly.Roasted feta and tomatoes after baking and being stirred, in a glass Pyrex baking dish.
  • This can be served as a warm dip for vegetables, a spread for bread, or mixed into pasta. If you want to add this to pasta, reserve a little bit of the starchy water before draining and mix a bit of pasta water in after you add the roasted feta and tomatoes to the pasta.
