Mini peppers make a great snack, or addition to any veggie board! I love these as an after-school snack idea for the kids because they are quick and easy to put together. Use your favorite dip to fill these, or try out my creamy hummus recipe. Whipped cream cheese and different types of seasoning is my go-to since they’re ingredients that I usually have on hand.

I served these on my tray of Ham and Cheese Peeps and they looked so cute!

This spring veggie board is so much fun because the mini peppers are disguised as carrots and can be stuffed with your favorite hummus or dip!

Ingredients

  • 1 bag mini colorful sweet peppers

  • 1 tub whipped cream cheese

  • 1/2 c hummus (my recipe is linked)

  • 1 tsp everything bagel seasoning

  • 1 tsp green goddess seasoning

  • 1 bunch flat leaf parsley (see notes)

Directions

  • Start by slicing the mini peppers in half and pulling out any seeds. I chose to use the orange peppers so they would look the most like carrots.
  • After cutting them in half, I made two small cuts in the shape of a V in the tops to remove the stem. This ends up looking better and gives a nice spot for the greens to sit, rather than just making a straight cut across the top.Mini orange peppers cut in half on a cutting board. There are peppers that haven't been cut yet behind the cutting board.
  • Now fill the peppers with your favorite dips! I did a combination of whipped cream cheese topped with everything bagel seasoning, whipped cream cheese topped with Green Goddess seasoning, and hummus. You could use anything you like for these including pre-made veggie dips from the grocery store.
  • Arrange on a tray with more dip and veggies and serve!Spring veggie board with nine halved mini orange peppers that re stuffed with cream cheese or hummus and have parsley coming out of the tops to make them look like carrots. Notes

  • I used flat leaf parsley to make the carrot tops, but you could switch it our for cilantro, curly leaf parsley, dill, or even chives. I would choose something that you have a use for, since you don’t need the whole bunch and you’ll have a lot leftover. Try to pick something that won’t go to waste!
  • The possibilities are endless for what you can fill these with! If you have a favorite dip recipe, or a favorite veggie dip from the store, they would be perfect!
